Healthy Alternatives for Carbs + Coffee + Carne !!!

Quinoa 
(pasta/rice/bread)

1/2 large zucchini + 2 carrots chopped and sautéed in seasoning of choice w/ 1 tbsp of coconut oil on med heat for 8 min. 

Add 1.5 cups of tri-color quinoa + 3 cups of water. Bring to boil and then lower to simmer for 15 minutes. 

Remove from heat and add 1 cup of fresh chopped parsley and sprinkle of salt. Enjoy as a main course or side dish. I served next to a dinner salad and served fresh cut strawberries + kiwi for dessert.

I purchased my Matcha Green Tea Powder from Zen's Tea House

Instead of reaching for a coffee or latte,   I heat 1 cup Oat milk to nearly a boil. Add 1/2 tsp Matcha powder + 1 tsp Moringa powder (<-- blog post on this superfood coming soon!).  Wisk together and sip. Give the potion time to pump you up but be ready for all day energy with no crash.

This is my vegetarian dream come true for healthy and natural with a meat-like texture ingredient. 

1- Boil 1 cup dried hibiscus flowers in a pot of water, separate concentrate (use as tea & stock) from flower and sauce with 1/2 an onion and clove of garlic in a pan with avocado oil. 

2 -Add half an avocado onto a tostada with additional toppings of your choice. I was in the mood for once again zucchini + red bell peppers. I topped it off with a squeeze of lime and some Valentina's hot sauce. 🔥🔥🔥
