QUICK SIDE DISH TIP
They don't call it summer squash for nothing. You'll see a lot of variety of squash in the market. You can serve it warm with garlic, oil and fresh herbs. Or serve it cold - spiral it out, add some salt, spice, cucumber & crumbled cheese.Cabbage, red or green, is a great cooling leaf to help keep our systems temperature regulated. Shave it down, throw in some nuts and soy sauce. Mix it in with your regular salad base to have a fulfilling lunch. It softens with any type of vinegar and pinch of salt.
Trying to keep a lean stomach now that it's bathing suit season? Try switching from beans, lentils, and rice as your carbs and go with potato. I love to switch up each week with red & sweet. I cut them based on my liking - add a little oil, spice (curry!), and salt. Bake at 375 for 20-40 minutes depending on the cut. They are filling, tasty and leave your stomach less bloated after.
Ingredients
- 1 cup kale, shredded , oiled & rubbed
- 2 cups green cabbage, shredded, oiled & rubbed
- 1/2 cup beets, shredded & warmed on pan w/ coconut oil
- 1 Japanese eggplant, quartered & cooked for 10 minutes w/ coconut oil
- 1 cup small tomatoes, halved
- 1/2 avocado, cubed
- 1/2 cup goat cheese, crumbled
- 1 tbsp hemp seeds
- 2 tbsp tahini mixed w/ 1/2 cup olive oil + 2 tbsp balsamic vinegar for dressing (I added fresh parsley + basil)
- 1 tbsp of Himalayan Pink salt to season

Broccoli, tossed in tahini - touched with some tumericRainbow πππ carrots , shaved w/ grape tomatoes - tossed in coconut oil + dash of sea salt
Potatoes, cubed - seasoned with fresh dill, diced garlic, oil, sea salt
Basic + Ready to Bake at 375 for 30 minutes. Let cool & dig in. π΄
